In last night’s Sourdough Artisan Bread class we made Pumpernickel and Swedish Rye.
Swedish Rye is very different from the rye breads we are familiar to in North America. It is a rich spicy bread that is reminiscent of holiday loaves. Pumpernickel comes in many shapes and forms. It is almost always made of coarse whole grains, and is usually very dark in colour. Pumpernickel is used for open face sandwiches and pairs well with cured fish and strong flavoured cheeses.
