After an all day chicken stock cook-fest, the first soup that I made as part of my Soup Adventures Revival was Chicken, Avocado & Chipotle Soup! 🙂
I love this soup because it has a bit of a kick to it from the chipotle peppers, but the smooth texture of avocado chunks can counter that kick so that it isn’t overpowering. 🙂
I have made this soup a number of times over the years, and the funny thing is.. it is never the same.. ever! It’s always different, and this time was no different. This time I made it the main meal, so that means there were a lot more pieces of chicken. I even doubled the avocado because avocado is so healthy for you. And then of course, I added the chopped scallions, and chopped fresh cilantro, garlic, and chipotle chilies. I then served it with slices of lime and tortilla chips… Yummy!! 😀
Last night I felt like experimenting with my chicken dishes the way I used to in the past. Last night’s experimentation was Chicken Lime Salad with Avocado! Yum! 🙂
To make this delicious salad I wanted to combine not only delicious fresh vegetables and herbs, chilled chicken, and the smooth creaminess of the avocado, with the crunch of tortilla chips.
I combined sour cream, mayonnaise and finely grated lime rind in a small bowl. I then stirred in pre-cooked chicken breast cut into small chunks and chilled. I then added grated carrot, chopped cucumber, chopped romaine lettuce, and salt and pepper. I let it chill a bit longer in the refrigerator, while I chopped fresh cilantro, fresh mint, fresh basil leaves, and fresh parsley. I then combined it altogether, including the chopped avocado in lime juice, and served it with some small tortilla chip flakes.
After a number of years of hiatus, I have decided to get back on track and continue the Grilled Cheese Sandwich Adventures, although I think I will need to change the name to the Gourmet Sandwich Adventures. 😉
Why you ask? Well, I decided that I wanted to expand beyond just grilled cheese sandwiches, although they were awfully tasty, to more varieties of sandwiches. Let’s face it, variety is the spice of life afterall. 😉
Today’s Gourmet Sandwich Adventure included two types of paninis: A bacon, avocado, tomato, cheddar, and black pepper on Toscano bread… and a mozzarella, proscuito, and tomato on Toscano bread. Delicious!! 😀
Only in Canada do African lions play hockey. Yup, that’s what I said.. Lions playing hockey!
These fabulous photos are from the Oaklawn Farm Zoo in Aylesford, Nova Scotia, and is home of Sterk, the African Lion. That’s him playing with his keeper.
These photos were uploaded to the Zoo’s Facebook page earlier this week during a cold spell, and the zoo noticed that the pond in the lion’s enclosure froze over.
So what does a Canadian do?
They play hockey, even if it’s in the cage of a ferocious predator. And well, let’s be honest… Lions are still nothing more than just but kitty cats always ready to play! 😉
In October we had a party to go to, so I decided to bake a little something yummy to bring along with us: Dark Lindt Chocolate Truffle and Raspberry Cheesecake..
It was absolutely decadent and incredibly delicious. There was a hint of raspberry liquour based into the cheesecake itself, and decorated with fresh raspberries that also added some beautiful colour. Plus, of course, topped off with large dark chocolate curls.
Let’s just say… not a crumb or morsel was left. 😉
This past September and October we spent three weeks travelling around Turkey. It was an amazing trip!
This trip definitely took a bit longer to recover from than I thought it would! Hahaha… It might have something to do with all the walking and climbing, and maybe even with that crazy flight home… But I saw so many amazing and unexpected things, I highly recommend everyone to visit this incredible country…
From beautiful mosques like the Hagia Sophia with its Christian mosaics, to the incredible blue tiles covering every inch of the Blue Mosque; to Greek and Roman ruins along the Aegean and Mediterranean (too many to count); to hot springs and healing mud baths; to Pamukkale and it’s dramatic travertines of hard, brilliantly white calcium that form pools; to lots of yummy food and desserts..
Just make sure you bring running shoes! There is a lot of uphill climbing everywhere… but it’s a great workout! 😉
