I LOVE Macarons! I was craving them so I decided to make a batch of yummy Orange Macaron cookie shells filled with Orange Cream. It’s like eating a creamsicle in the form of a macaron. Yum!

I will admit that there is a lot of work that goes into making this particular Macaron, so I made a little extra filling for an experiment. And what was that Experiment? An Orange Cream Tart!

What an amazing pairing! Just imagine… the orange-y tartness of the Orange Cream combined with the subtle graham shell, topped with a dollop of fresh whipped cream. Heavenly! πŸ˜‰

Sometimes the best dessert is something simple in idea but sophisticated in flavour. Case in point: The Cream Puff!

I love Cream Puffs. Light, airy, Pate de Choix pastry… but a sophisticated flavour filling with French Pastry Cream made with Vanilla Bean. Then sprinkled with a dusting of powdered sugar on top! Perfection!

Bunny Birthday Cake! :)

What is better for a toddler birthday cake than one inspired by Bunnies and Disney?

Nothing!

Well, that was what I was tasked with the other day: To create a magical Disney Bunny cake!

My first idea was to create all the characters for the cake out of marzipan or fondant, until it was said to me that the toddler may want to play with those decorations. So instead I switched my plan to include toys. And I mean, actual toys! No cheap (yet strangely expensive) cake toppers that aren’t safe to play with, but real toys. Toys.. that I found at the Disney store. πŸ™‚

I ended up buying these super cute Bambi set figurines, with not only one bunny (Thumper), but two bunnies.

I then set out planning the rest of the cake. What do bunnies eat? Carrots, of course. So a Carrot Cake with light Cream Cheese Frosting it is!

Next on the list? A fondant tree, with leaves and flowers. I decided I wanted more dimension to the look of the tree. So many times colour worked into fondant looks flat in my opinion, so instead I hand painted the leaves and flowers for, on and around the tree (on the top of the cake). I wanted a watercolour look to them.

I did create additional flowers, leaves, and a mushroom for the figurines by the base of the cake. I felt they were more like secondary characters, and so the leaves and flowers would be more subtle. This is where I mixed the colour directly into the fondant to not distract too much from the top focal point of the cake, but to still balance alongside what was going on top of the cake.

Strawberry Macarons with White Chocolate Lemon Ganache! Yummy!

For Valentine’s Day, I made macarons… but not just any traditional macarons, I decided to get creative. Β And boy did they turn out delicious!!

I made Strawberry Macaron cookie shells, but with two different fillings.

The first filling was a White Chocolate Lemon Ganache. The tart flavour of the fresh lemon with the sweet of the white chocolate makes a perfect pairing, with neither overpowering the other And then combined with the strawberry cookie shells, and you couldn’t ask for a better combination! πŸ™‚

The second filling I made was a Basil Buttercream. Yum! The buttercream tastes amazing because I used fresh basil leaves which I infused. But it’s not a savory filling per se, rather a sweet buttercream with herbal notes. And basil is a perfect pairing with the sweetness of berries, and in this case, strawberry cookie shells. πŸ™‚

Fried Chicken Legs?!

A friend told me one day that there was going to be a fried chicken competition. And everyone was invited to compete for the title of Best Fried Chicken.

Well… I can make traditional fried chicken. And my fried chicken is awfully tasty. But is it the best? Probably not. I can be completely honest about that.

So what did I decide to do? Well, I decided to enter, and win that fried chicken competition. To do that though, I needed to step outside-of-the-box and created my own special ‘fried chicken’.

The final result – “Fried Chicken Legs”: Caramel cupcakes with chunks of ooey-gooey melty caramel goodness, vanilla frosting, coated in graham cracker crumbs, and topped off with white chocolate bones.

Macarons!

Created a delicious new macaron today! Pink Peppercorn Macarons with White Chocolate Grapefruit Ganache filling. Yummy! πŸ˜€

This combination makes for a stunning macaron, with the Pink Peppercorn Macaron cookie shells, because of their subtle pink colour and fleck of crushed pink peppercorns both in the cookie itself, as well as sprinkled on top. But also with the White Chocolate Grapefruit Ganache filling which is creamy and decadent, with a shiny appearance.

White chocolate can be overly sweet, so combining it with ingredients that help cut though that sweetness, like grapefruit and pink peppercorns… make for a well balanced dessert.

If you take a look at the photos, you can see I even decided to play a bit with the look of the cookie. I figured with the New Year upon us, why not step outside the traditional box, both with flavours and look. I piped the macaron shells with the traditional plain tip for the round cookie, and with the star tip to make it look a little more festive. πŸ™‚

Candy Cane Macarons

This week I made a variation of the Candy Cane Bark but in a macaron.

The macarons have a cookie shell that are peppermint flavour, with a Lindt chocolate ganache filling infused with fresh mint leaves, and rimmed in crushed candy canes. Yummy!

What could be more perfect for Christmas than that?! πŸ˜‰

A Birthday Cake For My Husband! :)

I must admit, I was a little late creating a birthday cake for my husband this year. Now I did have a good reason.. we were in Peru on vacation at the time, so I am allowed a little slack. When the time did come to create something special, I wanted it to be fun.. something unexpected.. something he would get a kick out of.. So I made sure to include some of his favourite things: Chocolate Cake, Chocolate Bars, and Candy! πŸ™‚

The final result: A Lindt Chocolate Brownie Cake with Chocolate Cream Mousse Filling and decorated with colourful Chocolate M&Ms and Kit Kat Chocolate Bars! Yum!

Not only was it super fun to look at.. it was so unbelievably delicious and decadent!
