Gourmet Artisan Pizzas

I haven’t posted about my obsession with creating some amazing Artisan Pizzas lately, but that doesn’t mean I haven’t been experimenting. Check out this bevy of yummy delights I have created over the last few months:

Chicken Tostadas With Green Salsa & Chipotle

The other night I tried something new.. Chicken Tostadas With Green Salsa & Chipotle! πŸ™‚

To make the tostadas, I fried tortillas in a small amount of vegetable oil, in a non stick skillet until crisp. I then set them aside in a warming pan.

I then placed chicken chunks in a pan with chicken stock and garlic, and sprinkled some ground cumin. I brought it to a boil, then reduced the heat and cooked it for 1-2 minutes or until the chicken turned opaque. I removed the chicken from the heat and let stand in its hot liquid.

I then placed the crisp tostadas on a plate, sprinkled cheddar cheese all over it. I then removed the chicken from the hot liquid and divide it amongst the tostadas. I topped the chicken with fresh chopped cilantro, diced tomatoes, a handful of chopped romaine lettuce, thinly sliced scallions, sliced avocado, sour cream and a little bit of chipotle chiles. Yum!

Note: If you like beans, you can heat beans in a separate pan with enough water to form a smooth puree. This can be spread on the warm tostadas before adding the chicken.

Chicken Lime Salad with Avocado… With A Twist..

Tonight I revisited one yummy chicken dish I made several months ago – Chicken Lime Salad with Avocado! Yummy!

I combine delicious fresh vegetables and herbs, chilled chicken, and the smooth creaminess of the avocado, with the crunch of tortilla chips. Only this time I made some slight adjustments. πŸ˜‰

I combined sour cream, mayonnaise and finely grated lime rind, and grated gingerroot in a small bowl. I then stirred in pre-cooked chicken breast cut into small chunks and chilled. I then added grated carrot, chopped cucumber, and salt and pepper. I let it chill a bit longer in the refrigerator, while I chopped fresh cilantro, fresh basil leaves, and fresh parsley. I then combined it altogether, including the chopped avocado in lime juice, and served it with some small tortilla chip flakes.

The final result… a delicious and fresh tasting meal perfect for a warm Summer evening. πŸ™‚

Chilled Avocado Soup

The Soup Adventures continue with a Chilled Avocado Soup.

I first put lemon juice into a food processor (or blender). Then I added coarsely chopped avocados, snipped fresh chives, chopped fresh flat-leaf parsley, cold chicken stock, light cream, and Worcestershire sauce. I processed all the ingredients into a smooth puree.

I then transferred everything to a bowl and seasoned with salt and pepper. I covered the bowl tightly with plastic wrap and chilled in the refrigerator (for at least 30 mins).

Once ready, I stirred it, then ladled it chilled soup bowls, then garnished with a swirl of cream and a sprinkling of snipped fresh chives.

Last night I created my newest pizza sensation: The Habaneran – Hot Peppers with Avocado, Cilantro, and Lime! Yum!

First, I of course took out one of my frozen pizza dough balls and let it defrost and rise. Once the dough was ready to be created into my pizza base… I stretched it out until I reached the desired size. Then the layers of flavour and toppings began….

I brushed my dough with my homemade Herbed Grill Oil, which consists of high quality extra virgin olive oil, minced garlic clove, dried oregano, dried thyme, and dried basil.

I then dusted my pizza with some shredded Parmesan, and sprinkled shredded mozzarella. I then dropped spoonfuls of my Chunky Tomato Basil Sauce, consisting of minced garlic cloves, finely chopped fresh basil leaves, chopped ripe tomatoes, a bit of tomato paste, sea salt, freshly ground pepper, a tiny bit of sugar. Finally, I sprinkled on a finely chopped habanero pepper. Then in the oven it went.. πŸ˜‰

Once the pizza was cooked, I removed it from the oven and garnished it with thinly sliced avocado, and chopped fresh cilantro. I also squeezed lime juice over the whole pizza. So Delicious!!!! πŸ˜€

Am I predictable?

I would normally say ‘no’.. but I must admit when it comes to my soup adventures, maybe the answer is ‘yes’. Though, I will never admit that! πŸ˜‰

This week I made another batch of one of my favourite soups: Chicken, Avocado & Chipotle Soup.

I love this soup because it combines chicken stock, tender chicken breast, finely chopped garlic gloves, chipotle chiles, chunks of fresh avocado, thinly sliced scallions, chopped fresh cilantro… and of course, lime wedges and handful of tortilla chips on the side. πŸ˜‰

The Soup Adventures Revival

After an all day chicken stock cook-fest, the first soup that I made as part of my Soup Adventures Revival was Chicken, Avocado & Chipotle Soup! πŸ™‚

I love this soup because it has a bit of a kick to it from the chipotle peppers, but the smooth texture of avocado chunks can counter that kick so that it isn’t overpowering. πŸ™‚

I have made this soup a number of times over the years, and the funny thing is.. it is never the same.. ever! It’s always different, and this time was no different. This time I made it the main meal, so that means there were a lot more pieces of chicken. I even doubled the avocado because avocado is so healthy for you. And then of course, I added the chopped scallions, and chopped fresh cilantro, garlic, and chipotle chilies. I then served it with slices of lime and tortilla chips… Yummy!! πŸ˜€

Grilled Cheese Sandwich Adventures Continue… or Does it?! ;)

After a number of years of hiatus, I have decided to get back on track and continue the Grilled Cheese Sandwich Adventures, although I think I will need to change the name to the Gourmet Sandwich Adventures. πŸ˜‰

Why you ask? Well, I decided that I wanted to expand beyond just grilled cheese sandwiches, although they were awfully tasty, to more varieties of sandwiches. Let’s face it, variety is the spice of life afterall. πŸ˜‰

Today’s Gourmet Sandwich Adventure included two types of paninis: A bacon, avocado, tomato, cheddar, and black pepper on Toscano bread… and a mozzarella, proscuito, and tomato on Toscano bread. Delicious!! πŸ˜€

Grilled Cheese Sandwiches

Yes, that title is correct. I made Grilled Cheese Sandwiches. Okay, so not your ordinary Grilled Cheese Sandwiches, but Gourmet Grilled Cheese Sandwiches. Hahaha πŸ˜‰

I was watching Oprah the other day, and Martha Stewart was on there. Among other things discussed on the show, in the later part of the show, they ended up making GourmetΒ Grilled Cheese Sandwiches. I had seen gourmet versions before on cooking and restaurant shows, and had always planned to make a version of them, but never got around to it. Well, not until now.

On Sunday for lunch I decided to make a Cheddar, Dijon Mustard, Bacon, Tomatoes, Avocado and Pepper on Sourdough bread. But I didn’t have any sourdough bread, so instead I made the Gourmet Grilled CheeseΒ Sandwiches with the Tuscan Bread I baked in my Rustic Artisan Bread class. Boy-o-boy did they turn out amazing! The Dijon mustard and black pepper cut through the saltiness and fattiness of the avocado and bacon. I am definitely going to have to make this sandwich again, plus try making others!! πŸ˜€
