Artisan Gourmet Pizza…

Recently, I decided to create another installment in our pizza adventures.

Now instead of following along the lines of a specific well known pizza, like a margherita pizza for instance, I thought I would just add flavours that we like and would possibly use if we ordered a pizza: mozzarella, bacon, pepperoni, peppers, fresh basil.

I, of course, started with premade handmade pizza dough that I had stashed in my freezer, let it defrost and rise. Then when ready, I brushed it with my Herbed Grill Oil, placed slices of yummy mozzarella, then placed the rest of the toppings – bacon, pepperoni, and orange peppers all over the pizza. But before putting it in the over, I dropped spoonfuls of my freshly made Chunky Tomato Basil Sauce all over the pizza.

I then cooked the pizza in the oven until it was perfectly cooked. Sprinkled it with fresh basil.. and Yum!!! ๐Ÿ™‚

It just doesn't get any better than this!! :)

After spending days making stock, both Chicken and Vegetable, I hadn’t had a chance to make any of my soups with them.. until now.. So finally I got a chance to make one of my favourites: Chicken & Potato with Bacon. ๐Ÿ™‚

After a slight hiatus, the pizza adventures continues with The Trattorian.. aka: a meat lovers pizza! ๐Ÿ˜‰

The Trattorian, although considered a traditional pizza here in North America, my husband (who is Italian) says it is not something you would find in Italy. But that didn’t stop us!

First I started off by making a whole new batch of Southern Italian pizza dough. I put several balls into the freezer for future use. Then I began the prep for The Trattorian.

First, I cooked a spicy Italian sausage, and slow cooked hickory-smoked bacon until it was crisp.

I then brushed my prepped pizza dough with my Herbed Grill Oil, sprinkled finely grated Parmesan cheese, and shredded Mozzarella cheese.

I then dropped spoonfuls of the Chunky Tomato Basil Sauce on top of the pizza. I added thin slices of pepperoni, thin slices of the spicy Italian sausage, thin slices of yellow peppers, and super thin slices of onion. I also scattered torn pieces of the bacon all over the pizza.

I then cooked the pizza in the oven until it was perfectly cooked. Yummy!! ๐Ÿ˜€

Soup Adventures… An Old Favourite!

My husband asked me to make soup last weekend, so I turned to an old favourite: Chicken & Potato with Bacon.

I love making this soup. Although a lot of work, it’s one of my favourites b/c it’s one of those ‘meals’ that just makes you happy. It’s definitely a comfort food that most people haven’t been lucky enough to discover yet.. ๐Ÿ˜‰

I figured I would try and wait a good week before making the next installment in my return to the Soup Adventures, but clearly I wasn’t that successful. Ha!

Last night, I made one of my favourites: Chicken & Potato Soup with Bacon. Yummy!

This soup is full of flavor, and so hearty that I make it as a full meal. And why not? You can see by the photos that it is full of chunks of potato, chicken, and bacon. But there are also chopped leeks and onion. It’s made from the chicken stock I made from scratch days earlier, but a touch of heavy cream is added to give the broth a creamier taste and texture.

You definitely can’t go wrong with this soup! ๐Ÿ˜‰

Grilled Cheese Sandwich Adventures Continue… or Does it?! ;)

After a number of years of hiatus, I have decided to get back on track and continue the Grilled Cheese Sandwich Adventures, although I think I will need to change the name to the Gourmet Sandwich Adventures. ๐Ÿ˜‰

Why you ask? Well, I decided that I wanted to expand beyond just grilled cheese sandwiches, although they were awfully tasty, to more varieties of sandwiches. Let’s face it, variety is the spice of life afterall. ๐Ÿ˜‰

Today’s Gourmet Sandwich Adventure included two types of paninis: A bacon, avocado, tomato, cheddar, and black pepper on Toscano bread… and a mozzarella, proscuito, and tomato on Toscano bread. Delicious!! ๐Ÿ˜€

Soup and Grilled Cheese Sandwich Adventures Continued Again… Yay!

Yup.. that is correct! I have finally gotten back on track and made Soup and Grilled Cheese Sandwiches again. Its been too long since our last installment. Over two months to be exact. But today I have brought us back on track!! ๐Ÿ˜‰

After being extremely busy with school, and work, and then going on vacation, and yes, even getting sick with the flu, I have finally had the chance to get back into the swing of things.ย Yesterday I used the very last of my frozen Chicken Stock to make Chicken and Potato with Bacon Soup. Definitely one of my favourites! I also made variations of past Grilled Cheeses to create a variety of different sandwiches:
* Cheddar Cheese, Bacon, Tomato, and Basil on Old Fashioned Belgian Bread.
* Guyere Cheese, Proscuito, Onion Slices and Black Pepper on Old Fashioned Belgian Bread.
* Guyere Cheese, Green Apple Slices and Taragon on Old Fashioned Belgian Bread.
* Buffalo Mozzarella and Tomato on Old Fashioned Belgian Bread.

Grilled Cheese Sandwiches

Yes, that title is correct. I made Grilled Cheese Sandwiches. Okay, so not your ordinary Grilled Cheese Sandwiches, but Gourmet Grilled Cheese Sandwiches. Hahaha ๐Ÿ˜‰

I was watching Oprah the other day, and Martha Stewart was on there. Among other things discussed on the show, in the later part of the show, they ended up making Gourmetย Grilled Cheese Sandwiches. I had seen gourmet versions before on cooking and restaurant shows, and had always planned to make a version of them, but never got around to it. Well, not until now.

On Sunday for lunch I decided to make a Cheddar, Dijon Mustard, Bacon, Tomatoes, Avocado and Pepper on Sourdough bread. But I didn’t have any sourdough bread, so instead I made the Gourmet Grilled Cheeseย Sandwiches with the Tuscan Bread I baked in my Rustic Artisan Bread class. Boy-o-boy did they turn out amazing! The Dijon mustard and black pepper cut through the saltiness and fattiness of the avocado and bacon. I am definitely going to have to make this sandwich again, plus try making others!! ๐Ÿ˜€

Cheese & Bacon Soup.

After the very time consuming soup adventure last time.. Tonightย I decided to tackle an easier one this time around. The plan: Cheese & Bacon Soup.

I melted butter in a large pan, added chopped garlic and onion and cooked, stirring until slighly softened. I then added chopped bacon and leeks, cooking for a few more minutes.

In a separate bowl, I mixed flour with enough chicken stock to make a smooth paste, and stirred it into the pan. After a few minutes, I poured in the remaining stock, and added chopped potatoes. I seasoned with salt and pepper, brought the soup to a boil, then lowered the heat and let the soup gently simmer for 25 minutes, until the potatoes were tender and cooked through.

I stirred in heavy cream and cooked for an additional 5 minutes, then gradually stirred in grated cheddar cheese, until melted. I removed the soup from the heat and served with a little grated cheese for garnish. Mmm mmm good! ๐Ÿ˜‰
