For Valentine’s Day, I made macarons… but not just any traditional macarons, I decided to get creative. And boy did they turn out delicious!!
I made Strawberry Macaron cookie shells, but with two different fillings.
The first filling was a White Chocolate Lemon Ganache. The tart flavour of the fresh lemon with the sweet of the white chocolate makes a perfect pairing, with neither overpowering the other And then combined with the strawberry cookie shells, and you couldn’t ask for a better combination! 🙂
The second filling I made was a Basil Buttercream. Yum! The buttercream tastes amazing because I used fresh basil leaves which I infused. But it’s not a savory filling per se, rather a sweet buttercream with herbal notes. And basil is a perfect pairing with the sweetness of berries, and in this case, strawberry cookie shells. 🙂
Created a delicious new macaron today! Pink Peppercorn Macarons with White Chocolate Grapefruit Ganache filling. Yummy! 😀
This combination makes for a stunning macaron, with the Pink Peppercorn Macaron cookie shells, because of their subtle pink colour and fleck of crushed pink peppercorns both in the cookie itself, as well as sprinkled on top. But also with the White Chocolate Grapefruit Ganache filling which is creamy and decadent, with a shiny appearance.
White chocolate can be overly sweet, so combining it with ingredients that help cut though that sweetness, like grapefruit and pink peppercorns… make for a well balanced dessert.
If you take a look at the photos, you can see I even decided to play a bit with the look of the cookie. I figured with the New Year upon us, why not step outside the traditional box, both with flavours and look. I piped the macaron shells with the traditional plain tip for the round cookie, and with the star tip to make it look a little more festive. 🙂
